President Dwight D. Eisenhower's Tomato Preserves Recipe
Ingredients
- 5 lbs fresh tomatoes
- 10 garlic cloves, minced
- 2 black garlic cloves, minced
- 1 jalapeño, seeded and minced
- 2 Tbsp fresh ginger, minced
- ¼ cup fish sauce
- 2 cups sugar
- 2 cups red wine vinegar
- 2 star anise pods
Directions
Puree the tomatoes, garlic, black garlic and ginger together in a food processor. Combine all of the ingredients in a stainless-steel saucepan and cook over medium-high heat, stirring occasionally, for 30 minutes, or until mixture reaches a jam-like consistency. Cool and store in the refrigerator for up to 2 weeks.
