culinary heritage
The Chase Smash Burger is inspired by a traditional St. Louis burger sauce which is made with Mayonnaise, Ketchup, Dijon Mustard, Relish and Worcestershire sauce. The Chase sauce is unique because of the signature spice blend which was inspired by Chef Caroline Taylor’s cookbook from 1934. Chef Taylor, who was known to the community as Mrs. Rufus Taylor, was one of the first female Chefs at the Park Plaza Hotel when the industry was dominated by European male chefs. Also prepared and offered is the Chase Park Plaza "Yum Yum Cake" originally served in The Sea Chase, a restaurant at the hotel that opened in 1970. The restaurant was used in the Charlton Heston MGM Movie, The Wreck of the Mary Deare, and the Yum Yum Cake was one of the best-selling items from the bill of fare.
